The ground
A growing town in southern Huila, on the slopes above the Magdalena river. Warm days, cool nights and altitude around 1,500 to 1,900 m.
The variety
For years the farmers of Huila grew a coffee they took for a Bourbon that had turned pink. They guarded the seed anyway. When genetic work finally looked closer, the label fell apart: Pink Bourbon is not a Bourbon, but an Ethiopian line growing quietly in Colombian ground.
It is the closest thing coffee has to a misfiled gem: catalogued as one stone, revealed as another, and kept because the cup had already made the case. This is the variety the house intends to be known by.
